Soaking Almonds In Water
Almonds are not only the most delicious nuts, but also one the most nutritious, a great source of proteins, fibers, omega-3 and -6 fatty acids, calcium, magnesium, and zinc. They are also the least acid-forming nuts, which is great for a lot of us trying to keep our ph more alkali (even more balanced).
However in order for your bodies to actually enjoy all the health benefits of these nuts we have to consume them without their skin. Why? The skin of Almonds has an enzyme inhibitor that protects it until germination.
Soaking almonds in filtered water overnight (or at least eight hours), removes this inhibitor, and not only allows access to its nutrients but it also makes it easier to digest.
Place the almonds in a container with a lid, pour the filter water until it covers the almonds, and place it in the fridge overnight. Drain the almonds in the morning, peel the skin (the peel should come off very easily), and enjoy.
I keep mine in the water, switching the old water for fresh filtered water daily. The longer the almond is in the water the easier the skin comes off.
